We will meet at the iconic Palacio de Bellas Artes, where we will begin with a brief talk on the importance of chili in Mexican culture and cuisine. Then we will walk to Mercado 2 de Abril, considered the first public market in Mexico City founded in 1880.
We will walk its corridors like real locals to select the best chilies, spices and other typical ingredients. You will learn to distinguish the different varieties of chili pepper : ancho, guajillo, tree, habanero, chipotle, pasilla, mulato and more.
Afterwards, we will go to a private studio-workshop nearby, where we will make different types of sauces using techniques such as mashing and taming.
The experience culminates with a sensory tasting in which we will taste the sauces accompanied by traditional snacks such as moles, cheeses and fruits, all designed to highlight flavors: sweet, salty, tangy, bitter and smoked.
