I am Enrique Montaño Oaxacan cook and I will take you first to the market to know some ingredients of Oaxacan cuisine, and there we choose the menu, we can find some dried chillies and toast them in the comal to prepare some mole or sauce. You will also learn the technique to make tortillas to accompany the meal.
I will share part of our traditions and on dates our food is consumed, both in a festivity or daily in which we enjoy a mezcal.
