We will meet at JR Musashi-Sakai Station at 10:00 AM. Look for a tall, glasses-wearing guide in front of the NEW DAYS convenience store outside the station's central ticket gate. From there, we’ll drive you to our home kitchen. The drive takes about 20 minutes.

This private, artist-led plant-based sushi experience takes place in our home kitchen and studio. Using seasonal vegetables and traditional Japanese tools, you will learn to make several styles of vegetable sushi. The selection varies depending on daily ingredients, but may include nigiri, inarizushi, gunkan, hosomaki, oshizushi, and chirashi-zushi.
The class begins with an introduction to the meaning and history of “sushi,” followed by hands-on instruction in making sushi rice with vinegar. With step-by-step guidance, you will prepare plant-based sushi and practice using traditional tools, including Japanese kitchen knives.

"Please note: While all sushi made in this class is 100% plant-based, the kitchen and tools are not exclusively vegan and may also be used for non-vegan cooking. All equipment is cleaned before use."

Class length and content are flexible. We have previously offered extended formats, including a two-day intensive course covering the full preparation process. For customized courses, please contact us before booking.
