stop at an artisan mezcal factory to discover the care and passion behind each bottle. You’ll know how agave is selected, which can take up to 25 years to mature, and how it cooks slowly in stone ovens, which gives it that characteristic smoky flavor. Then you will see the traditional grinding process with the tahona, and how the must naturally ferments in wooden or stone tubs. Finally, distillation in copper or mud stills preserves the unique aromas and nuances that make mezcal an Oaxacan gem. By sampling its different varieties, you will understand why this distillate is so much more than a drink – it is bottled history, tradition and culture to share.
