Cooking Class : Creating tacos al pastor and tortillas by hand

In this class led by two professional chefs (You choose in English or Spanish), you will run the complete process of tacos al pastor from scratch. You will prepare the marinade using dried hydrated chilies, spices and acidic elements, learning proportions, roasting and grinding to achieve depth and balance.

You will marinate the protein (or vegetable alternative) by applying correct timing and cooking techniques to obtain proper caramelization and flavor development without overcooking.

You will work with nixtamalized corn dough, adjusting hydration, uniform pressing and comal cooking to achieve tortillas with elasticity and optimal point.

You will make two sauces using roasting and grinding techniques, balancing acidity, itching and saltiness to complement the fat and texture of the dish.

Finally, you will assemble and taste your tacos applying proportion and structural balance.

The class brings transferable technique, process control and real culinary understanding, not just a recipe.

In addition, we have a delicious vegan and vegetarian option, created especially for those who do not consume animal protein. The vegan version is exclusive, full of flavor and made with the same technique and depth as the traditional shepherd.
