I am a native of Xochimilco, deeply engaged in the preservation and revitalization of its unique ecosystem and cultural heritage. My work is centered on collaborative efforts with local chinamperos (traditional farmers) and environmental activists to physically restore the ancient chinampa landscape. This hands-on experience is informed by my deep knowledge of the area's history and its Indigenous communities, allowing me to act as a bridge between Xochimilco's profound past and its sustainable future.

Traditional snack prepared with Chicharrón, guacamole, pico de gallo, cactus salad and cheese. We can also prepare a vegetarian and vegan variation.
