What to expect

Step into the world of traditional Italian cheesemaking and discover how fresh mozzarella is made by hand before creating your own authentic pizza.

Begin with an introduction to the history and traditions of mozzarella, learning about its journey from milk to the finished cheese. Then, with your chef’s guidance, work the curd with hot water using the traditional “filatura” technique. Stretch, lift, and fold the cheese until it becomes smooth, elastic, and stretchy. Learn the traditional “mozzatura” technique to separate and shape your own individual mozzarella portions, then cool them until ready to enjoy.

Next, move on to pizza. Prepare traditional dough from flour, water, yeast, and salt, learning how to mix and knead it by hand. Stretch your dough and top it with tomato sauce, your freshly made mozzarella, and basil to create a classic Margherita.

Finally, bake your pizza in our traditional wood-fired oven and enjoy the fresh mozzarella and pizza you made yourself.
