Frantoio Congedi is an award-winning producer, recognised continuously since 2012, operating on 100% solar energy with a fully circular, zero-waste process. After exploring the groves, you'll return to the frantoio for a guided sensory tasting across the estate's different oil varieties — each a portrait of the Salento terroir — paired with taralli and local products. Authentic, unhurried, and deeply rooted in the land.

What to expect

Your experience starts at the frantoio with a guided tour of the working olive oil mill. Your host will explain the full production cycle — cold extraction, centrifuge technology, nitrogen-sealed stainless steel storage — and how the estate has achieved a completely zero-waste process since 2010, running entirely on solar power. You'll then head out to the estate's olive groves, approximately 1.5 km away, set in the coastal landscape of Ugento between the Ionian Sea and the Salento countryside. Groups of up to 4 guests can walk; groups of 5 travel by private car departing from the frantoio. Among the olive trees, your guide will explain how the coastal microclimate, local cultivars, and generations of expertise combine to shape the character of the oil. The experience concludes back at the frantoio with a guided sensory tasting: multiple oil varieties compared side by side, each with its own profile, paired with traditional taralli and preserved vegetables in olive oil.
