Tsukiji Sushi Making: From Ingredients to Sushi

2 hours (approximately)
Offered in: English

This experience is designed for guests who want to take part in more than just making nigiri and sushi rolls. Guests experience several steps that contribute to the sushi they will later make and enjoy, including receiving the seafood ingredients used in the class from local wholesale vendors in Tsukiji Market, mixing sushi rice in a traditional wooden tub, and trying basic fish-slicing techniques.

The class is limited to a maximum of six guests, allowing everyone to take an active part in the experience while receiving close attention and guidance from the host. It is led by a licensed guide with experience from more than 200 sushi-making sessions as a host and interpreter.

Guests also learn practical tips for making better sushi, gain insights into sushi and Japanese seafood culture, and receive additional information that can be useful during their stay in Japan.

What to expect

Your licensed guide has worked at more than 200 sushi making sessions as a host and interpreter.

Guests max6 for this small-group activity meet the guide at the entrance to a building housing local wholesale shops in Tsukiji Market.

They walk through the building together to collect the seafood ingredients they will use later in the class, which arrived at the shops that morning. At a tuna specialty vendor, they collect most of these ingredients and can ask questions through the guide.

The group then goes to the kitchen studio located in the heart of Tsukiji Market, passing through some market streets.

There, with step by step guidance, guests first in turn mix sushi rice in a traditional wooden tub for their sushi and try slicing a block of fish to use as one of their toppings. They then make 6 kinds of nigiri and a thin sushi roll in a relaxed small-group setting. Throughout this process, guests also learn useful tips for making sushi.

The guide shares some interesting facts about sushi and Japanese seafood culture during the class.

Finally, guests enjoy the sushi they made while chatting with their guide, and receive a small souvenir.
