We’ll start by making the pasta from scratch, using spinach to create the classic green sheets that are a signature of the traditional recipe, just like our grandmas used to do!

Next comes the béchamel sauce, which you’ll prepare from scratch before layering everything together with a rich Bolognese ragù that we’ve slow-cooked in advance, the traditional way, because real ragù takes time and can’t be rushed. Layer by layer, you’ll prepare your authentic Lasagna, ready for the oven.

With the lasagna in the oven, you’ll make your homemade gelato using seasonal ingredients and easy-to-learn techniques.

While everything comes together, we’ll enjoy a traditional aperitivo with local wine, mortadella, and regional ham.

Finally, we’ll sit around the table to enjoy your handmade lasagna and gelato. At the end of the class, you’ll also receive the cookbook including the recipes of everything you’ve prepared, plus a few extra Italian classics to try at home.

What to expect

Step into our cozy cooking school in Bologna's historic center and learn to make authentic lasagna and homemade gelato.

You'll start by making fresh pasta with spinach, just like it’s traditionally done in Emilia-Romagna. Then, you’ll make béchamel sauce and assemble your lasagna with layers of pasta and a slow-cooked Bolognese ragù, prepared in advance following the classic method.

While the lasagna is baking, you’ll move on to gelato. With the help of your instructor, you’ll prepare one or two seasonal flavors using fresh ingredients and simple techniques you can replicate at home.

As the final step, enjoy an aperitivo with local wine, mortadella, and regional cold cuts. Then sit down together to taste the lasagna and gelato you’ve made.

At the end of the class, you'll receive a recipe booklet with all the dishes prepared and some additional Italian classics to try back home.
