This four-hour evening walk traces the city as it is lived, beginning at the Grand Socco before slipping into the whitewashed lanes of the medina. Along the way, the flavours unfold. Fresh oysters are shucked at the Marché Central de Poisson. Warm khobz is torn and dipped into creamy jben Berber cheese, sweetened with mountain honey and rich amlou. Fava beans, cooked overnight with beef in a communal oven, are impossibly rich and satisfying. Sheets of delicate warqa pastry are shaped by hand, while house-roasted coffee, spiced and aromatic, is poured alongside traditional Moroccan pastries. With more than 15 tastings, the experience is designed as a crash course in this coastal city's culinary scene.
