The University of Al Quaraouiyine (or Karaouine) in Fez is recognized as the world’s oldest continuously operating university, founded in 859 AD by Fatima al-Fihri. Originally a madrasa, it became a center of Islamic learning, attracting scholars from across the Muslim world and Europe. The university's library is home to priceless manuscripts and ancient texts, some dating back over a thousand years. The architecture of Al Quaraouiyine is stunning, with intricate carvings, tilework, and serene courtyards. Though the mosque and university are still in use and not fully open to non-Muslim visitors, parts of the library can be toured.

Bou Inania Madrasa*: Built in the 14th century by Sultan Abu Inan Faris, it’s a prime example of Marinid architecture. The school boasts stunning cedar wood carvings, zellij tilework, and intricate plasterwork. The central courtyard, adorned with a marble fountain, and the mosque attached to it still function today. It's one of the few religious buildings in Morocco that non-Muslims can enter.

Al-Attarine Madrasa*: Constructed between 1323-1325, it is smaller than Bou Inania but equally magnificent. Located near the famous Al Quaraouiyine Mosque, its beauty lies in its decorative green and white zellij tiles, as well as its delicate stucco and cedar wood detailing. The central courtyard features a lovely fountain, surrounded by dormitories where students once lived and studied the Quran.
