We will prepare the ice cream with a copper bowl, as indigenous and peasants used to do when there was no electricity. We belong to the international movement: SlowFood, so we make the ice creams in an artisan way, making visible an ancestral technique in a fun and innovative experience for your senses.

Its intense flavors of exotic fruits, local recipes, its colors and creaminess, are the exquisite option for the enjoyment of all in a "legend" that has been passed down from generation to generation.

What to expect

We'll meet at a time of your choice in the Plaza de la Trinidad, and from this central point in Cartagena de Indias, we'll take a walk to a popular local shop in the city where we'll learn how to make delicious paila ice cream.
Once we arrive at the ice cream parlor, which is run only by women and uses only ecological materials, we'll begin to prepare the ice creams. We'll use the traditional paila, a special metal pan that is specifically used for its large diameter and shallow depth.

As we prepare all the ingredients, we'll learn about the history of paila ice creams. Although they originate from Ecuador, they are also a very typical dessert in Pasto, the capital of the Colombian department of Nariño.

We'll make the ice creams in an artisan way from fruit or milk, only using natural and organic ingredients. At the end of the process, you'll taste three paila ice creams, which we're sure you'll love!

The workshop will last between one and a half and two hours, and at the end of the experience, we can accompany you to the meeting point. If you prefer, you can also stay longer on the premises to try other ice creams on your own.
