When I first started travelling, I really enjoyed the context provided by those old fashioned guidebooks, how the history of a country, a town a people were linked to what had happened there. I was stunned to realise that our food has been on a similar journey and I wanted to offer more than a class that teaches you how to play with melted chocolate, so here it is, a hands on entry into the world of chocolate making, from the tree to the bar and beyond. Oh this is all vegan, dark chocolate is vegan but it will taste like Christmas so milk chocolate fans, this will be a revelation.

Instead of drinking a melted spiced cacao brew, we'll use the ingredients to create or own unique indulgent inclusion chocolate bar.

We'll meet at Gate 5 at the Historic Port of Falmouth. It's s secure government port of entry so you'll need a passport or another form of photo ID to be able to visit us.

What to expect

On this experience you’ll learn the true story of how chocolate becomes the world’s favourite sweet.

We’re located on the edge of the Caribbean Sea in the Historic Port of Falmouth, a location normally accessible only to cruise ship passengers.

My family is from this area and has been growing cocoa for generations so I always give a brief history of the island and the historical use of chocolate.

I’ll tell you about how I went from a BBC Correspondent to a chocolate maker before I explain how we go from the raw ingredients to the finished yummy product.

We then get to know each other before we make our traditional Jamaican spiced chocolate but with a twist.

We'll roast cocoa in the big industrial machines before I share my favourite DIY hack for when you get home!

I’ll show you how to hand temper chocolate at any kitchen table using just a bowl, a a spatula and a hair dryer!

Before I walk you through creating your own custom made inclusion chocolate bars.

We’ll introduce you to the pods up close, we’ll look inside the fruit and I’ll explain how the beans are fermented on the farm and how the nibs are processed before we unveil your bespoke bars.
